About Assaf Winery

Assaf Winery is a family-owned boutique winery with vineyards planted across a basalt plateau at elevations ranging from 500 to 890 metres above sea level. The dramatic variation in altitude creates diverse growing conditions that let the winery cultivate a wide range of grape varieties, while the basalt soils lend a distinctive mineral character and the elevated terrain ensures cool temperatures and a long growing season. The estate thus enjoys some of the most varied and interesting viticultural conditions in Israel, and the family approach ensures the vineyards receive close personal attention throughout the season.

The Wines

Assaf grows an impressive range of varieties, including Zinfandel, Shiraz, Pinotage, Cabernet Franc, Cabernet Sauvignon, Pinot Gris, Chenin Blanc and Sauvignon Blanc, a selection that reflects both the varied conditions across the estate and the ambition of the team. The different plots are shaped by a changing landscape along the length of the property, each section giving fruit with its own character, while neighbouring agricultural and wild crops create a natural ecosystem that supports healthy vines and adds complexity. The elevated vineyards at 500 to 890 metres keep excellent natural acidity thanks to cool mountain nights, and the wines are recognised for their diversity, quality and genuine expression of the basalt plateau terroir.
