Lewinsohn Winery is a distinguished boutique producer based in Petah Tikva, making wines from grapes grown in the Adulam region of the Judean Foothills, an area of rolling limestone hills and ancient valleys that forms a natural transition between the Judean highland and the coastal plain. Founded by David Lewinsohn, the winery embodies a deeply personal approach, small in scale, uncompromising in ambition and entirely focused on expressing its Judean Foothills terroir. As a non-kosher boutique producer, Lewinsohn has the freedom to pursue a craft-driven philosophy that places the vineyard at the centre of every decision in field and cellar. The Adulam region, named for the ancient cave and city of biblical legend, has a distinct microclimate shaped by its position between the hills and the plain: Mediterranean sea breezes moderate the summer heat while limestone-rich soils impart a mineral quality, so the wines carry a sense of place that is quieter and more contemplative than those of Israel’s more prominent regions.

The Wines

Lewinsohn’s vineyards lie in the Adulam area at elevations between 200 and 400 metres, where limestone soils, moderate altitude and sea-breeze influence create growing conditions of genuine complexity. The vines are managed with minimal intervention so each site expresses itself fully, and low yields give grapes of concentrated flavour and natural balance. The portfolio focuses on varieties suited to the Judean Foothills climate, Cabernet Sauvignon, Merlot, Syrah and Petite Sirah among the reds, alongside Chardonnay and white blends, and Lewinsohn also makes innovative blends whose proportions follow each vintage’s character rather than a fixed recipe, giving a dynamic range that evolves year to year and marries Mediterranean warmth with limestone-driven freshness.

Visiting Lewinsohn rewards those who seek authenticity over spectacle. The boutique scale means visits involve direct personal engagement with the people behind the wines, with tastings held in a relaxed, informal atmosphere that invites genuine conversation about terroir and winemaking philosophy, more an encounter with a passionate craftsman than a commercial transaction. The surrounding Judean Foothills are themselves a reason to visit, with ancient archaeological sites, biblical valleys and scenic trails close by, and because Adulam remains relatively undiscovered by mainstream wine tourism, a visit offers both excellent wine and a genuine sense of discovery.
