About Soreq Winery

Soreq Winery was established in 1994 by the Shaham family, one of Israel’s pioneering boutique wineries. It sits in the Sorek Valley, which runs between the Jerusalem Mountains to the east and the Judean plains to the west, amid forests, rolling hills and archaeological sites going back some 3,000 years. The valley was a noted wine region in antiquity, and Soreq sees itself as part of its modern revival; its position between the mountains and the plains gives a natural microclimate that comes through in the intensity and texture of the wines.

The Wines and School

Soreq draws grapes from selected vineyards in four growing regions across Israel, and keeps looking for new sites and grape varieties worth working with. It makes around 90,000 bottles a year across its own label, its winemaking school and service-winemaking clients. The school, one of the first professional winemaking schools in Israel, trains enthusiasts and aspiring winemakers, so the winery contributes to the wider industry through teaching as well as production.

Visiting the Winery

The founding idea was to create joy through winemaking, and that shows in a warm, enthusiastic welcome. Between the tastings and the school, it is a natural stop for anyone curious to learn the craft in one of Israel’s most historically resonant wine valleys.
