About Soreq Winery

Soreq Winery was established in 1994 by the Shaham family, making it one of Israel’s pioneering boutique wineries. The winery is located in the heart of the Sorek Valley, which stretches between the Jerusalem Mountains to the east and the Judean plains to the west. This picturesque valley is surrounded by forests, rolling hills, and ancient archaeological sites that date back 3,000 years. Furthermore, the area was once a renowned winemaking region in antiquity, and Soreq Winery is proud to be part of its modern revival.

The terroir of the Sorek Valley gives the wines their distinctive identity. The valley’s unique position between the mountains and the plains creates a natural microclimate that supports viticulture of considerable quality. As a result, the wines crafted at Soreq Winery express intense flavors and prominent texture that are characteristic of this exceptional growing area.

Wines and Vineyards

Soreq Winery sources grapes from selected vineyards in four different growing regions across Israel. This multi-regional approach allows the winery to explore a broad range of terroir expressions in each vintage. The team continually seeks new vineyard sites that offer unique and captivating grape varieties. Moreover, all winemaking decisions are guided by a commitment to capturing the character of each variety and region in the finished wine.

The winery produces approximately 90,000 bottles per year, divided among its main label, its professional winemaking school, and service winemaking clients. In addition, the winery operates one of Israel’s first professional winemaking schools, dedicated to educating enthusiasts and aspiring winemakers in the art and science of wine production. Consequently, Soreq Winery contributes to the development of the broader Israeli wine industry through education as much as through production.
