Carmey Avdat Winery is one of Israel’s most distinctive wine destinations. It stands in the Negev Highlands, just five minutes from Sde Boker. Hannah and Eyal Izrael founded the farm in 1998 and planted their first vines the following year.

Carmey Avdat Winery and Ancient Nabataean Terraces

The vineyards at Carmey Avdat Winery stand on the remnants of a 1,500-year-old Nabataean vineyard. The Izrael family revived these ancient terracing and irrigation systems, which had lain dormant for centuries. As a result, every bottle connects the drinker to thousands of years of winemaking history in this land. Furthermore, no other winery in Israel can claim this kind of living historical continuity.

The winery opened in 2005 and today produces twelve wine types across six grape varieties. All editions are strictly limited. In addition, the winemaking approach embraces the desert’s natural character through lengthy cold fermentations, oak barrel ageing, and minimal intervention.

Desert Terroir

The Negev Highlands provide dramatic conditions for growing grapes. Intense sunlight, mineral-rich loess soils, and extreme day-to-night temperature swings create wines with real depth and originality. However, the high elevation also adds freshness and precision to the fruit. The result is a style found nowhere else in Israel.

Stay and Explore

Beyond the wine, Carmey Avdat Farm offers fourteen guest cabins and an on-site coffee house. Visitors can eat, stay overnight, and explore the desert landscape that surrounds them. Therefore, this is not just a winery visit — it is a complete Negev experience combining wine, history, and one of Israel’s most extraordinary natural settings.
