Shezaf Vineyard is one of Israel’s most remarkable and unconventional wine producers — a natural wine estate planted by journalist Tsur Shezaf in the high Negev plateau north of the Ramon Crater, arguably the southernmost vineyard for quality wine vines in the entire northern hemisphere. Tsur Shezaf, who spent his professional life as a journalist covering the Negev and its communities, made an audacious personal decision over a decade ago: to leave the comfort of Tel Aviv life and plant five acres of vines on the desert plateau, beginning an unlikely but passionate viticultural adventure. The vineyard, planted in 2011 at approximately 900 metres above sea level just north of the Makhtesh Ramon, grows Muscat Canelli, Malbec, Syrah, Cabernet Franc, Chenin Blanc, and Chardonnay — a diverse selection of varieties chosen for their ability to express the unique desert terroir rather than to fit conventional Israeli wine expectations.

Shezaf has committed to entirely natural winemaking: grapes are handpicked, spontaneously fermented using wild indigenous yeasts, and stored in previously used barrels. No synthetic sprays are used in the vineyard, and composting builds organic matter in the otherwise mineral-rich but organically poor desert soil. The result is wines of extraordinary individuality — bottles that genuinely cannot be confused with any other, carrying the distinctive character of high-altitude Negev desert production filtered through a natural winemaking philosophy.

The estate also produces olive oil, reflecting the same holistic approach to Mediterranean agriculture that sees wine as part of a broader engagement with the ancient agricultural traditions of the land. The vineyard’s tasting room offers visitors the chance to sample these distinctive natural desert wines while taking in breathtaking views of the Makhtesh Ramon and the surrounding desert landscape — an experience as unique as the wines themselves. Shezaf claims to have the highest percentage of beneficial insects in the Negev as a result of the farm’s chemical-free approach, and the harmony between agriculture and the natural environment is central to the estate’s identity.
