About Shvo Vineyards

Shvo Vineyards is a boutique producer rooted in the village of Jish (Gush Halav) in the Upper Galilee, one of Israel’s most celebrated and climatically diverse wine regions. The winery has built its identity around minimal-intervention winemaking and a deep respect for the natural character of its Galilean sites, working from the conviction that the finest wines are grown rather than manufactured and that the winemaker’s job is to guide natural processes rather than override them. The Galilee spans a wide range of elevations, exposures and soils, from high basalt plateaus to limestone ridges and warm coastal valleys, and Shvo has chosen sites across the region whose individual characters best suit the varieties planted in each, with an approach to viticulture that emphasises long-term soil health.

The Wines

Shvo’s vineyards are spread across several Galilee sites. Higher plots on basalt and chalk above 700 metres give the cool conditions ideal for a long, gradual ripening, while lower, Mediterranean-warmed parcels suit varieties that thrive on fuller sun. The winery works mainly with Cabernet Sauvignon, Merlot, Syrah and Grenache among the reds, and Chardonnay and Viognier among the whites, while also exploring alternative varieties suited to the Israeli climate. The wines are made with restrained oak and a focus on natural fruit expression, coming out elegant and food-friendly, each release a thoughtful statement about the potential of Galilean terroir.
