About Simon Winery

Simon Winery is a family boutique winery located in Kiryat Tivon, a town nestled among the forested slopes of the Lower Galilee. The winery was founded in 2010 by Zeevi Simon, who began his winemaking journey driven by a deep love for red wine and a passionate curiosity about what lies behind each bottle. Today, Simon Winery produces wines that reflect both the terroir of multiple Israeli growing regions and the personal vision of its founder.

Zeevi Simon’s path to winemaking began with study trips to European wineries in France, Italy, and Spain. These visits gave him a broad foundation in European winemaking tradition and philosophy. Furthermore, upon returning to Israel, he trained professionally under the guidance of Nir Shaham at Soreq Winery. As a result, his winemaking approach combines the elegance of European tradition with a deep respect for Israeli terroir.

Wines and Vineyards

Simon Winery sources grapes from select vineyards across multiple Israeli growing regions, including the Amikam area, the Golan Heights, Ramot Naftali, and Ben Zimra. This diversity of sources allows the winery to craft wines of considerable variety and complexity. Specifically, the winery works with varieties including Shiraz, Cabernet Sauvignon, Merlot, Carignan, and Malbec.

All wines are aged in French oak barrels for a period of 12 months. This careful maturation adds structure and depth to each label. Moreover, the use of multiple sourcing regions allows the winemaking team to select the finest fruit for each varietal expression. Consequently, every bottle reflects both the character of its origin and the skill invested in its production.
