Vortman Winery is an organic boutique winery founded in 2003 in Haifa. From the beginning, the winery committed to producing exceptional wines using only organic grapes sourced from the Carmel region. This focus on organic viticulture reflects a deep belief that the best wines come from land that is treated with genuine care and respect for natural processes.

The winery oversees the entire process from vineyard to bottle. The vineyards are cultivated using certified organic methods. In addition, irrigation is kept to a minimum, allowing the vines to grow in balance with the natural vegetation of the Carmel hillsides. This low-intervention approach is central to the Vortman philosophy.

Wines and Vineyards

Vortman Winery ferments its wines using wild yeasts in small tanks. This preserves the natural complexity of the grapes and avoids the uniformity that commercial yeasts can produce. Furthermore, the winery enriches its vineyard soils with compost made from grape skins, completing a natural cycle that feeds back into the quality of future vintages.

The winemaking process combines traditional methods with careful scientific monitoring. As a result, the wines achieve a balance between authenticity and precision.
