About Gvaot Winery

Gvaot Winery sits in Givat Harel, overlooking the Nahal Shiloh stream in the heart of Samaria. Founded in 2005 by Amnon Weiss, it stands at roughly 800 metres above sea level, where cool temperatures slow ripening and preserve the grapes’ natural acidity, giving the wines a freshness and elegance typical of cool-climate viticulture. The winery makes around 75,000 bottles a year and has established itself as a significant producer in the hills of Samaria.

The Wines

Gvaot’s winemaking is led by Dr. Shivi Drori, a researcher from Ariel University known for his work rediscovering ancient Israelite grape varieties; he has identified around 60 varieties once grown here thousands of years ago, connecting the winery to the deepest roots of local viticulture. In the cellar the emphasis falls on cold, slow fermentation, which preserves aromatic complexity and delicate fruit, while manager Eliav Miller oversees daily operations to keep quality consistent across vintages. The pairing of high-altitude vineyards and careful winemaking yields wines of genuine distinction that express the character of the ancient Samarian hills.
