About Midbar Winery

Midbar Winery is a boutique desert winery near Mitzpe Ramon in the Negev Highlands, specialising in white and red wines produced in limited editions from vineyards planted at 800 metres above sea level. That elevation, combined with the desert’s extreme day-to-night temperature swings, creates remarkable conditions for growing grapes of genuine character and intensity. The name Midbar means desert in Hebrew, a fitting description for a winery that draws its whole identity from its surroundings: here the desert setting is not a challenge to overcome but the defining quality that makes the wines unlike anything produced elsewhere in Israel.

The Wines

Midbar’s vineyards grow in Libyan loess and limestone soils unique to the Negev Highlands, and these mineral-rich soils, together with intense solar radiation and dramatic temperature swings, develop deep complexity in the grapes, while a minimal spraying regime preserves the natural character of the fruit. The wines are made in strictly limited quantities, so each vintage faithfully reflects the specific conditions of that year’s desert growing season, and the winery avoids excessive intervention in the cellar so the terroir of the Negev can speak clearly in every bottle.
