The winery specialises in white and red wines produced in limited editions from vineyards planted at 800 metres above sea level. This elevation, combined with the desert’s extreme day-to-night temperature swings, creates remarkable conditions for growing grapes of genuine character and intensity.

The name Midbar means desert in Hebrew — a fitting description for a winery that draws its entire identity from its extraordinary surroundings. The desert setting is not a challenge to overcome. Wines and Vineyards

The vineyards at Midbar Winery grow in Libyan loess and limestone soils unique to the Negev Highlands. These mineral-rich soils, combined with intense solar radiation and dramatic temperature swings between day and night, develop deep complexity in the grapes. Furthermore, the winery follows a minimal spraying regime to preserve the natural character of the fruit.

Midbar Winery produces its wines in strictly limited quantities. As a result, each vintage faithfully reflects the specific conditions of that year’s desert growing season. In addition, the winery avoids excessive intervention in the cellar so that the terroir of the Negev can speak clearly in every bottle.
