About Savion Winery

Savion Winery is a micro-boutique garagiste winery set on Moshav Mesilat Tzion in the Jerusalem Mountains, part of the celebrated Judean Hills wine region. Founded by Ashi Salmon and Eli Pardess from the 2000 vintage, Savion is one of Israel’s most intimate wine projects — a labour of love producing tiny quantities of wine with an intensity of focus that belies the scale of production. The name Savion comes from the Hebrew word for the common groundsel wildflower, evoking the natural beauty of the Judean landscape where the winery is rooted.

Wines and Vineyards of Savion Winery

Moshav Mesilat Tzion sits in the Jerusalem Mountains at around 700 metres above sea level, on ancient limestone terraces shaped over centuries of agricultural history. The terroir here is quintessential Judean Hills — deep terra rossa soils over limestone bedrock, well-exposed to Mediterranean light, moderated by cool mountain air, and possessing exceptional natural drainage. These conditions foster the slow, even ripening that allows Savion’s wines to develop the complexity and nuance that defines the best wines of the region.

As a garagiste producer, Savion Winery focuses on producing a very small number of bottles each year from carefully selected grapes, prioritising quality at every stage. The portfolio is built around the great Bordeaux red varieties — Cabernet Sauvignon and Merlot — handled with the same meticulous attention given by the finest artisan producers worldwide. Fermentation, barrel selection, and blending decisions are all made by hand with complete personal involvement by the founding partners, resulting in wines of uncommon depth and personality.

Visiting Savion Winery

Due to the micro-scale nature of Savion Winery’s production, visits are best arranged in advance through direct contact with Ashi Salmon or Eli Pardess. The winery’s home at Moshav Mesilat Tzion is accessible from Jerusalem via the scenic Judean Hills roads, and the setting is beautifully evocative of the ancient agricultural landscape of this remarkable region. Advance booking is highly recommended given the small scale of operations.
