About Yaffo Winery

Yaffo is a boutique estate winery in the Elah Valley, a region often called Israel’s Tuscany. Grapes have been grown here since ancient times, with archaeological evidence confirming deep local roots, and Yaffo carries that tradition forward. Terroir guides every decision: the particular mix of geography, soil, altitude and climate that shapes the fruit. The Elah Valley’s conditions are exceptional, and grapes grown here develop a character that is hard to reproduce elsewhere in Israel.

The Wines

The winery grows the varieties best suited to the valley, among them Cabernet Sauvignon, Merlot and Shiraz, but Cabernet Franc is its signature, an elegant grape with the potential to set the wines apart. Vineyard work is meticulous, weighing altitude, soil, slope and sun exposure plot by plot and choosing only the best zones in the valley, so the grapes reach full ripeness with balanced acidity and concentrated flavour.

Visiting the Winery

The Elah Valley makes a beautiful backdrop for a visit. Guests can walk the vineyards, learn how terroir shapes the wine, and take guided tastings that compare varieties and vintages, discovering a valley with a centuries-old connection to the vine.
