The winery was founded in 1997 by Itamar Salomon, a seasoned farmer with years of experience cultivating vineyards in the region. What began as a small personal experiment in the basement of his home gradually transformed into a passionate vocation. Furthermore, by the year 2000, the home winery was already producing over 1,000 bottles annually, confirming that the hobby had evolved into something far more serious.

The transition from home winemaking to professional production was a natural progression driven by quality and growing demand. Itamar replaced the original basement cellar with a modern winery facility built within the courtyard of his Moshav Amikam residence.
